LEFTOVER POTATO PANCAKES
Ingredients:
- About 2 cups of leftover mashed potatoes
- 1 large egg
- 1/4 cup all-purpose flour
- 2-3 Tbsps. of bacon grease or other oil
Instructions:
- Mix the potatoes, egg, and flour in a bowl — it will be much firmer than regular pancakes.
- Heat your pan with the grease or oil, then begin spooning batter once it’s good and warm.
- Flip until browned on both sides and enjoy with syrup, apple sauce, or butter.
