Leftover Potato Pancakes

LEFTOVER POTATO PANCAKES

Ingredients: 

  • About 2 cups of leftover mashed potatoes
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 2-3 Tbsps. of bacon grease or other oil

Instructions:

  1. Mix the potatoes, egg, and flour in a bowl — it will be much firmer than regular pancakes. 
  2. Heat your pan with the grease or oil, then begin spooning batter once it’s good and warm. 
  3. Flip until browned on both sides and enjoy with syrup, apple sauce, or butter.
