INGREDIENTS:
- 1 kg beef pieces
- 250 gr smoked bacon pieces
- 4 onions (sliced)
- 4 garlic cloves (chopped)
- 3 red paprikas (capsicum - chopped)
- 4 tomatoes (chopped)
- 1 (small) tin tomato paste
- 2 tbsp paprika powder (if possible 1 mild and 1 hot)
- 1 tsp cumin powder
- 2 springs thyme
- 2 bay leaves
- 2 tbsp worchester sauce
- 250 ml red wine
- 250 ml beef stock
METHOD:
- Fry the beef in a pan with some butter. Remove and keep aside
- Fry the bacon pieces
- Add the onions and garlic
- Add the paprika powder
- Add the fried beef back into the pan
- Add the cumin, thyme, bay leaves and worchester sauce
- Add the wine
- Add the tomatoes and paprikas (capsicums)
- Add tomato paste and beef stock
- Add some water
- Bring to the boil
- Lower the fire and let it simmer for minimum 2 hrs.
