CABBAGE STIR FRY (KERALA)
INGREDIENTS:
- 1 medium sized cabbage
- 1 medium sized onion, chopped
- 10-12 curry leaves
- 1 tsp black mustard seeds
- 1 tsp cumin seeds
- 1 green chilli chopped
- 1/2 tsp turmeric powder
- 1/2 cup grated coconut
- 1 or 2 tbsp coconut oil
- Salt as required
METHOD:
- Rinse the cabbage and shred or grate it (or slice thinly)
- Heat the oil in a pan and sauté the mustard seeds until they crackle
- Add the cumin seeds and sauté till they change color
- Add the onion until translucent
- Add the green chilli and sauté for a minute
- Add the turmeric powder and mix well
- Add the cabbage and salt, mix well and sauté for a minute
- Cover the pan and cook on low fire, until cabbage is tender, stirring once in a while
- Cook till all moisture is gone
- When the cabbage is cooked, add the coconut, mix and cook for 2-3 min more
- Serve
