Cabbage Stir Fry

CABBAGE STIR FRY (KERALA)


INGREDIENTS:
  • 1 medium sized cabbage
  • 1 medium sized onion, chopped
  • 10-12 curry leaves
  • 1 tsp black mustard seeds
  • 1 tsp cumin seeds
  • 1 green chilli chopped
  • 1/2 tsp turmeric powder
  • 1/2 cup grated coconut
  • 1 or 2 tbsp coconut oil
  • Salt as required
METHOD:
  1. Rinse the cabbage and shred or grate it (or slice thinly)
  2. Heat the oil in a pan and sauté the mustard seeds until they crackle
  3. Add the cumin seeds and sauté till they change color
  4. Add the onion until translucent
  5. Add the green chilli and sauté for a minute
  6. Add the turmeric powder and mix well
  7. Add the cabbage and salt, mix well and sauté for a minute
  8. Cover the pan and cook on low fire, until cabbage is tender, stirring once in a while
  9. Cook till all moisture is gone
  10. When the cabbage is cooked, add the coconut, mix and cook for 2-3 min more
  11. Serve
