Spicy tomato soup

SPICY TOMATO SOUP


INGREDIENTS
  • 3 onions (white preferred but red will do)
  • 3 carrots medium size
  • half a celergy
  • 1 leek
  • vegetable stock (3 maggi / oxo cubes)
  • 400 gr chopped tomatoes (can / tin)
  • 2 Large chopped beef tomatoes
  • 1 can of tomato paste
  • 1/2 tbsp sambal Oelek or chilli paste or crushed chillies
  • pepper / salt


METHOD:
  1. Boil 2,5 liters of water in a stock pot
  2. Add the vegetable stock cubes
  3. Cut the onions, carrots, celery, beef tomatoes and leek into small pieces and add to the water
  4. Add chopped tomatoes
  5. Add tomato paste
  6. Add Sambal Oelek or chilli
  7. Add salt and pepper as desired
  8. Bring to the boil
  9. Simmer on low fire with lid (not fully closed) for about 2,5 hrs
  10. Add vermicelli or spaghetti
