SPICY TOMATO SOUP
INGREDIENTS
- 3 onions (white preferred but red will do)
- 3 carrots medium size
- half a celergy
- 1 leek
- vegetable stock (3 maggi / oxo cubes)
- 400 gr chopped tomatoes (can / tin)
- 2 Large chopped beef tomatoes
- 1 can of tomato paste
- 1/2 tbsp sambal Oelek or chilli paste or crushed chillies
- pepper / salt
METHOD:
- Boil 2,5 liters of water in a stock pot
- Add the vegetable stock cubes
- Cut the onions, carrots, celery, beef tomatoes and leek into small pieces and add to the water
- Add chopped tomatoes
- Add tomato paste
- Add Sambal Oelek or chilli
- Add salt and pepper as desired
- Bring to the boil
- Simmer on low fire with lid (not fully closed) for about 2,5 hrs
- Add vermicelli or spaghetti
