Spanish Garlic Soup

SPANISH GARLIC SOUP


INGREDIENTS:
  • About 6 cups of cubed French or Italian bread
  • 1/4 cup extra virgin olive oil, plus more to drizzle on bread cubes
  • 6-10 thinly sliced garlic cloves
  • 2 oz ham diced
  • 1-2 tsp paprika or to taste
  • 6 cups chicken broth or stock
  • 1/4 cup chopped Italian parsley
  • salt, pepper, cayenne to taste
  • 4 eggs (optional)


METHOD:
  1. Place tin foil on an oven tray and put the bread cubes on it. Bake in the oven for 15-20 on 350 F or 176 C (or about) until crunchy. Set aside when done.
  2. Heat olive oil in a cast iron pot and add the garlic and cook until golden on low heat
  3. Add ham and stir for 1 min
  4. Add the paprika and stir for 1 min
  5. Add the bread cubes
  6. Add the chicken stock and boil on high heat
  7. Add salt, pepper and cayenne to taste
  8. Reduce heat and add the parsley
  9. Add the eggs on top and cover the pot.
  10. Simmer for a while or until eggs are done, serve.
