Lamb Rogan Josh Low Fat

LAMB ROGAN JOSH


Total Time: 55min      Prep:15min   Cook:40min  Serves:6

INGREDIENTS:
  • Olive oil
  • 4 medium Onion(s), thinly sliced
  • 4 clove(s) Garlic, crushed
  • 40 g Root Ginger, 4cm (1 inch) piece peeled & grated
  • 1 kg Lamb Leg Steak, Lean, Boneless, raw, cut into chunks
  • 2 tablespoons, level Mixed Spice, (rogan josh powder)
  • 2 can(s), large Tinned Tomatoes, chopped
  • 4 tablespoons, level Tomato Purèe
  • 2 cube(s) Vegetable stock cube(s), chicken, made up with 300 ml hot water
  • 2 pinch Salt
  • 2 teaspoons Black pepper, Freshly ground
  • 2 teaspoons Coriander, fresh, to garnish
  • 2 teaspoons Olive Oil

METHOD
  1. Heat oil in a heavy based pan
  2. Heat, add onions and sauté for 3-4 minutes, until softened. 
  3. Add garlic and ginger and cook for 30 seconds. 
  4. Add lamb chunks and cook until browned - about 5 minutes. 
  5. Stir in spice powder.
  6. Add tomatoes, tomato puree and stock. 
  7. Simmer, partially covered, for 30 minutes, or until the meat is tender, adding more stock, if needed. Season.
