Sweet Chili Sauce

SWEET CHILLI SAUCE


Ingredients

  • ¼ cup water x 2
  • ½ cup rice vinegar
  • 2 tbsp fish sauce
  • 2 tbsp soy sauce
  • 2½oz – 70g palm or brown sugar
  • 6 cloves finely crushed garlic
  • 5 Red chillies
  • 2 hot Thai or bird's eye chilies (optional)
  • 1 whole fresh lime juice
  • 1 ½ tsp corn-starch

Steps

 Step 1
Chop all the chilies very finely, set aside.

 Step 2
In a sauce pan add ¼ cup water, vinegar, fish sauce, soy sauce, sugar, and bring to a gentle simmer. Simmer for 5 minutes.

 Step 3
Add the minced garlic and simmer on low for 2 more minutes.

 Step 4
Make a slurry by mixing the corn starch with a ¼ cup water then add to mixture. Whisk on low heat for 30 seconds until thick.

 Step 5
Add the juice of one freshly squeezed lime. Mix well.

 Step 6
Pour hot in glass jar with air tight lids (or sterilized for long shelf life)

 Step 7
Store in fridge once opened.
