Apple Cinnamon Loaf

 

Ingredients

  • 1 & 1/2 cups self raising flour 225 grams
  • 3/4 cup caster sugar 165 grams
  • 125 grams butter softened
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 cup milk 130 grams
  • 1 large apple
  • 1/2 tsp cinnamon

Instructions

Preheat your oven to 180 degrees and line the base and sides of a large loaf tin with baking paper.

Place the self raising flour, caster sugar, softened butter, vanilla extract, eggs and milk in the bowl of an electric mixer and beat until just combined.

While the cake mixture is beating, peel an apple (you can use any variety) and roughly chop it into pieces no bigger than 1cm. Place the apple pieces into a small bowl and add the cinnamon before gently stirring to combine.

Pour the cake mixture into your prepared cake tin and sprinkle the cinnamon coated apple pieces over the top.

Bake for 50 - 55 minutes or until cooked when tested with a skewer. Carefully remove your Apple and Cinnamon Loaf from the oven and allow it to cool in the loaf tin for 10 minutes before transferring to a wire rack to cool completely.
