Tuscan chicken & tomato soup

 

Ingredients

  • 1 medium yellow onion, diced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 tbsp minced garlic
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1,5 liter chicken stock
  • 1 can chopped tomatoes 
  • 1 big tomato diced
  • 1 tbsp sambal oelek
  • 1 tsp chili flakes
  • some tomato paste to thicken
  • Salt & pepper to taste 
  • broken pasta or vermicelli

INSTRUCTIONS

  1. In a large pot add the chicken stock and bring to boil
  2. Add the onions, celery, and carrots.  
  3. Add the garlic, basil, and oregano. 
  4. Add all the tomatoes, sambal into the pot and stir. 
  5. Season the soup with chili flakes, salt and pepper.  
  6. When done (20-30 min cooking) add the vermicelli
