Beef Stew Keto

INGREDIENTS

  • 1kg beef stew meat
  • salt, pepper, nutmeg
  • 3 tablespoon olive oil 
  • 500 ml beef stock
  • 400ml can diced tomatoes
  • 1 half red bell pepper, chopped
  • 1 half green bell pepper, chopped
  • 1 tomato, chopped
  • 2 celery sticks, chopped
  • 2 small carrots, peeled and chopped
  • 1 small sweet onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoon tomato paste
  • 2 tablespoon Worcestershire sauce 
  • 2 teaspoon salt
  • 1 1/2 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 2 potatoes, diced

INSTRUCTIONS

  1. Heat the olive oil in a large skillet over medium-high heat. 
  2. Season the beef with salt, pepper and nutmeg
  3. Once the oil is hot, add the beef to the pan and sear until it is browned on both sides. 
  4. Meanwhile, heat oil in an iron cast pot and fry the veggies
  5. After frying the beef add it to the cast iron pot. (do this in batches.) After every batch, add some water to the skillet and 'clean' the pan. Add this also to the cast iron pot.
  6. Add the beef stock, can of tomatoes, tomato paste, Worcestershire sauce, salt, pepper, garlic powder, onion powder, and dried oregano.
  7. Cover and cook for 3 hrs
