Kerala Egg Masala

 

Ingredients

  • Egg – 5 nos
  • Onion – 3 nos
  • Tomatoes – 2 nos
  • Ginger – 1 nos
  • Green chilli – 2 or 3 nos
  • Coriander leaves – one small hand full.
  • Turmeric powder – 1 tbsp
  • Red chilli powder – 1 1/2 tbsp
  • Coriander powder – 1 tbsp
  • Salt – 1 or 2 tbsp
  • Oil – 3 or 4 tbsp

Method

  1. Heat water in a pan add salt and egg
  2. Cover and boil them well.
  3. Drain boiled eggs and put in a bowl filled with cold water .
  4. Deshell the boiled eggs and cut it into small pieces ,keep aside.
  5. Heat oil in a pan add chopped onion and sauce them well.
  6. Then sprinkle some salt and saute them well.
  7. Add chopped ginger and green chilli ,saute them well.
  8. Then add spices like turmeric powder ,red chilly powder and coriander powder saute them well.
  9. Then add chopped tomatoes and saute till they become soften.
  10. Then pour sufficient amount of water
  11. Then mix and boil them well.
  12. Then add some coriander leaves and stir them well.
  13. Then add some salt and mix them well.
  14. Cover and cook them well.
  15. Then add boiled egg pieces and mix them well.
  16. Cook for 3 to 4 minutes
  17. Remove from fire and set aside.
  18. Serve the tasty egg masala recipe with appam or chappathi
