Kerala Style Tasty Chinese Potato Stir Fry

 

Ingredients

  • Chinese potato – 1 kg
  • Shallots – 15 to 16 nos
  • Curry leaves – 4 to 5 sprigs
  • Turmeric powder- 1/2 tbsp
  • Dry red chilli powder – 2 tbsp
  • Mustard seed – 1 tsp
  • Salt – 1 or 2 tsp
  • Oil – 5 to 6 tbsp

Method

  1. Clean the potatoes one by one and keep them aside.
  2. Cut the potatoes into small cubes and set them aside.
  3. Wash the chopped potatoes two to three times. Drain well and set aside.
  4. Put cleaned potatoes in a pan.
  5. Add turmeric powder, salt, and water, mix them well.
  6. Then, heat the potato mixture pan.
  7. The shallots should then be crushed and set aside.
  8. Remove the lid and saute them well.
  9. Once the potato is well cooked, remove it from the fire and set
  10. Heat oil in a pan, allow the mustard seeds to sputter.
  11. Then add curry leaves and crushed shallots.
  12. Saute and fry till they become a light golden brown.
  13. Then add the crushed dry red chiles and saute them well.
  14. Add cooked Chinese potatoes and mix them well.
  15. Then fry for two to three minutes.
  16. Take the pan off the heat and serve.
