Mushroom curry

 

►Step 1

Ingredients

  • Mushroom -250g
  • Turmeric powder – 1/2 tspoon
  • Clean the mushroom by rinse well with turmeric powder and water. Keep it aside.

►Step 2

For Grinding

Ingredients

  • Scraped coconut -3/4 piece of Coconut
  • Shallots – 3-4 piec e
  • Coriander – 1 1/2 tspoon
  • Garlic – 3 – 4 piece
  • Dry chilli – 3-4 piece
  • Fennel seeds- 1 1/2 tspoon
  • Cinnamon -1-2 piece
  • Cloves- 3-4 piece

  1. Add 2- 3 spoon of oil on pan and fry the ingredients from scraped coconut to dry chilli till brown color. Keep it aside till cool down.
  2. Once cool down, grind the fried ingredients along with all masalas ( fennel seeds, cinnamon, cloves) to very fine smooth paste.

►Step 3

For making Curry

►Ingredients

  • Coconut oil 5-6 tspoon
  • Mustard Seeds 1 tspoon
  • Shallots- 10-12 piece cut into small pieces
  • Coconut piece – 1/4 coconut cut medium equal pieces
  • Dry chilli – 3-4 piece
  • Green chilli – 3-4 piece
  • Ginger – 1 medium piece
  • Salt – as required

  1. Put a pan add coconut oil, once oil get hot add mustard seeds let it splutter. Add 1/4 of Shallots, Coconut pieces and Dry chillies.
  2. Once this ingredients turned brown add rest of shallots, green chillies, curry leaves and Mushroom then add turmeric powder. Once all mixed well add the grounded paste to the pan and add salt.
  3. Close the lid and let it cook well for 15 minutes.
  4. Serve hot with Rice, chappathi, appam and idiyappam
