Beans and potato stir fry

 

Ingredients

  • Beans – 1/2 kg
  • Potato – 3 nos
  • Garlic – 9 to10 nos
  • Curry leaves – 3 or 4 sprigs
  • Red chilli powder – 1 tbsp
  • Coriander powder – 1 tbsp
  • Turmeric powder – 1/2 tbsp
  • Garam masala- 1/2 tbsp
  • Mustard seed – 1 tsp
  • Cumin seed – 1 tsp
  • Salt – 3 or 4 nos
  • Oil 3 or 4 tbs

Method

  1. Peel and clean the beans. Wash and drain and set them aside.
  2. Chop into medium-sized pieces and set aside.
  3. Peel and clean the potatoes. Cut it into medium sized pieces Thoroughly wash and drain them before setting them aside.
  4. Heat oil in a pan, add mustard seed and cumin seed, let them splutter.
  5. Add chopped garlic, sauté them well.
  6. Add chopped potato pieces and sauté them well.
  7. Add some curry leaves and sauté them well.
  8. Add long beans and sauté them well.
  9. Add some salt to taste and sauté them well.
  10. Add some spices like red chilli powder, coriander powder, turmeric powder
  11. Add some asafoetida powder, sauté them well.
  12. Cover the pan with a lid and cook for 5 to 6 minutes till the potatoes and beans are cooked .
  13. Sprinkle garam masala powder on top and combine them well.
  14. Sauté and fry them well.
  15. Once the fry is ready, remove from fire and serve
