Lentil pasta sauce
Ingredients:
- oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 celery stick, finely chopped
- 2 tomatoes chopped
- 100g dried lentils, rinsed
- 400g chopped tomatoes
- 1 tbsp tomato puree
- 1 jar of pasta sauce
- Maggi hot & sweet sauce
- 1 tbsp sambal oelek
Method:
- In a large skillet, heat the olive oil over medium heat.
- Add the onion and cook, stirring occasionally, for 10 minutes or until the onion is soft.
- Add the garlic and celery cook for 3 minutes.
- Add the tomatoes
- When the onion is soft, add the lentils along with all the remaining ingredients
- Bring to a gentle simmer and leave for 20-25 minutes, stirring occasionally.
- After 20-25 minutes, the sauce should have thickened.
