Belgian Waffles (Luik)

BELGIAN WAFFLES (LUIK)



INGREDIENTS:
– 750 gr flour
– 270 cl lukewarm milk 
– 70 gr yeast
– 3 whole eggs and 2 egg yolks
– 15 gr salt
– half a pack of vanilla sugar
– 400 gr soft butter
– 500 gr sugar

METHOD:
  1. Sieve the flour in a bowl
  2. add 3 whole eggs.
  3. add some salt
  4. heat up the milk in a little pan until it's lukewarm, add the yeast and stir until it's a paste.
  5. add the milk and yeast paste to the flour and eggs.
  6. mix with a mixer or fork until it's absorbed by the flour mix.
  7. Add the two egg yolks and mix everything to a smooth mix.
  8. Leave it for 15 to 30 minute to rise, covered with a tea towel.
  9. make small portions of the soft butter and add to the mix.
  10. add the sugar and mix well.
  11. Make little dough balls of 100 gr and leave them to rest for another 15 min.
  12. Each dough ball is good for one waffle
