BELGIAN WAFFLES (LUIK)
INGREDIENTS:
– 750 gr flour
– 270 cl lukewarm milk
– 70 gr yeast
– 3 whole eggs and 2 egg yolks
– 15 gr salt
– half a pack of vanilla sugar
– 400 gr soft butter
– 500 gr sugar
METHOD:
- Sieve the flour in a bowl
- add 3 whole eggs.
- add some salt
- heat up the milk in a little pan until it's lukewarm, add the yeast and stir until it's a paste.
- add the milk and yeast paste to the flour and eggs.
- mix with a mixer or fork until it's absorbed by the flour mix.
- Add the two egg yolks and mix everything to a smooth mix.
- Leave it for 15 to 30 minute to rise, covered with a tea towel.
- make small portions of the soft butter and add to the mix.
- add the sugar and mix well.
- Make little dough balls of 100 gr and leave them to rest for another 15 min.
- Each dough ball is good for one waffle
