CHICKEN FRIED RICE
INGREDIENTS (serves 4-6):
- 2 tbsp oil
- 400 gr of dried Thai or long grain rice
- 225 gr. boneless skinless chicken breasts
- 3 tbsp of minced garlic
- 1 small onion finely chopped
- 3 tbsp of finely sliced shallots
- 100 gr red chillies, deseeded and shredded
- 2 tsp of sugar
- 1 tbsp fish sauce or soy sauce
- 3 tbsp of spring onion finely shredded or chopped
- salt & pepper
Optional: peas, carrots, tomatoes etc
METHOD:
STEP 1:
At least two hours in advance, or the night before, cook the rice. Spread it out on a backing sheet and allow it to cool thoroughly, then put it in the fridge until needed.
STEP 2:
Slice the chicken into thin strips and set aside.
Heat a wok or large frying pan over a high heat and add the oil.
When it's very hot and slightly smoking, add the garlic, onion, shallots, chillies, 2 tsp of salt and 1/2 tsp of pepper and stir-fry for 2 minutes.
STEP 3:
Add the chicken and stirfry for 2 minutes, then add the rice and continue to stirfy for 3 minutes.
Add the sugar, spring onions and fish sauce and stir-fry for 2 minutes.
