VEGETABLE FRIED RICE
INGREDIENTS:
- 1 tsp olive oil
- 1 garlic clove
- 1/4 red paprika
- 115 gr crushed tomatoes
- 1/8 Italian seasoning
- salt and pepper
- 1/8 tsp coriander powder
- 1 tsp lemon juice
- 3/4 cup brown rice
- 3/4 cup spring onions
- 1/4 cup corn
METHOD:
- boil the brown rice, set aside
- heat oil in heavy based pan
- Add all ingredients 1 by 1 and stir fry after each ingredient
- Add the rice
- Add the spring onions
- Add the corn
- Stir fry for a few minutes.
