Vegetable Fried Rice

VEGETABLE FRIED RICE

INGREDIENTS:
  • 1 tsp olive oil
  • 1 garlic clove
  • 1/4 red paprika
  • 115 gr crushed tomatoes
  • 1/8 Italian seasoning
  • salt and pepper
  • 1/8 tsp coriander powder
  • 1 tsp lemon juice
  • 3/4 cup brown rice
  • 3/4 cup spring onions
  • 1/4 cup corn

METHOD:
  1. boil the brown rice, set aside
  2. heat oil in heavy based pan
  3. Add all ingredients 1 by 1 and stir fry after each ingredient
  4. Add the rice
  5. Add the spring onions
  6. Add the corn
  7. Stir fry for a few minutes.
