chicken firecracker curry 🌶️
MARINATION REQUIRED
INGREDIENTS:
- 120g jasmine rice (any rice will do!)
- 1 tbsp vegetable oil
- 2.5cm piece of ginger
- 2 garlic cloves
- 1 white onion
- 1 red pepper
- 1 green pepper
- 2 spring onions
- 2 chicken breasts cut into strips
- 1 red chilli
- 100ml firecracker sauce
Marinating:
- garlic
- ginger
- fresh coriander
- lemon juice
garnish
- 1 tsp dried chilli flakes
- 1 tbsp toasted mixed sesame seeds
- 1 tbsp sesame oil
- 2 spring onions
- 2 lime wedges
METHOD:
- marinade the chicken with a bit of oil, garlic, ginger, coriander and lemon juice for a few hours or overnight.
- boil the rice
- Chop all the vegetables.
- Heat oil in a wok and add the chicken strips and fry.
- Add garlic and ginger
- Add onion, chili, red & green peppers, stir fry for a few min
- Add firecracker sauce
- garnish your dish
