chicken firecracker curry 🌶️

MARINATION REQUIRED

INGREDIENTS:
  • 120g jasmine rice (any rice will do!) 
  • 1 tbsp vegetable oil
  • 2.5cm piece of ginger
  • 2 garlic cloves
  • 1 white onion
  • 1 red pepper
  • 1 green pepper
  • 2 spring onions
  • 2 chicken breasts cut into strips
  • 1 red chilli
  • 100ml firecracker sauce 
Marinating:
  • garlic
  • ginger
  • fresh coriander 
  • lemon juice
garnish 
  • 1 tsp dried chilli flakes 
  • 1 tbsp toasted mixed sesame seeds 
  • 1 tbsp sesame oil
  • 2 spring onions
  • 2 lime wedges 


METHOD: 
  1. marinade the chicken with a bit of oil, garlic, ginger, coriander and lemon juice for a few hours or overnight.
  2. boil the rice
  3. Chop all the vegetables.
  4. Heat oil in a wok and add the chicken strips and fry.
  5. Add garlic and ginger
  6. Add onion, chili,  red & green peppers, stir fry for a few min
  7. Add firecracker sauce
  8. garnish your dish
