Egg Curry - Kerala - India



INGREDIENTS:


  • 1 tsp salt
  • 2 onions
  • 2 cm ginger cut or 1/2 tsp ginger paste
  • 1 tbsp coriander powder
  • 4 hard boiled eggs
  • 1 tomato sliced
  • 1 tsp chilli powder
  • 1/2 tsp turmeric powder
  • oil
  • 10 cm fresh coriander leaves chopped
  • Maggi Hot & Sweet tomato sauce or ketchup *
METHOD:

  1. Fry onions and ginger in oil
  2. add tomatoes
  3. add salt and spices
  4. add water and maggi sauce / ketchup
  5. add chopped coriander leaves
  6. simmer with lid for about 3 min
  7. add boiled eggs
  8. simmer for another 10 min
