INGREDIENTS:
- 2kg potatoes diced
- 4 onion
- 2 tsp ginger paste
- 2 tsp turmeric powder
- salt
- 1 big tomato
- 6 green chillies, deseeded and chopped
- 2 tsp garlic paste or 3 garlic cloves
- 4 tbsp coriander
- oil
For the seasoning (optional):
- mustard seeds
- red dry chillies
METHOD:
- Heat up oil in a deep pan and fry the onion
- Add tomato, chillies, ginger and garlic
- Add the spices and salt
- Add the potatoes and water to cover just the top of potatoes and cook for 25 min
- Fry the mustard seeds and red dry chillies in a separate pan and add to the potatoes before serving
