Potato Curry - Kerala - India

 



INGREDIENTS:
  • 2kg potatoes diced
  • 4 onion
  • 2 tsp ginger paste
  • 2 tsp turmeric powder
  • salt
  • 1 big tomato
  • 6 green chillies, deseeded and chopped
  • 2 tsp garlic paste or 3 garlic cloves
  • 4 tbsp coriander
  • oil
For the seasoning (optional):
  • mustard seeds
  • red dry chillies

METHOD:

  1. Heat up oil in a deep pan and fry the onion
  2. Add tomato, chillies, ginger and garlic
  3. Add the spices and salt
  4. Add the potatoes and water to cover just the top of potatoes and cook for 25 min
  5. Fry the mustard seeds and red dry chillies in a separate pan and add to the potatoes before serving
