Tomato Soup - Belgium



INGREDIENTS:

  • 2 onions (white preferred but red will do)
  • 8 garlic cloves chopped
  • 2 carrots medium size
  • half a celergy
  • 1 leek
  • 1/2 green capsicum
  • 200 gr potatoes cubed
  • vegetable stock (4 maggi / oxo cubes)
  • 2 cans of meatballs
  • 420 gr cherry tomatoes or 1 beef tomato
  • 400 gr chopped plum tomatoes (can / tin)
  • tomato paste
  • pepper / salt
  • 1/2 tbsp sugar
  • 1 tbsp sambal oelek
  • vermicelli or spaghetti

METHOD:
  1. Boil 2,5 liters of water in a stock pot
  2. Add the vegetable stock cubes
  3. Cut the garlic, capsicum, potatoes onions, carrots, celery and leek into small pieces and add to the water
  4. Add chopped tomatoes
  5. Add meatballs
  6. Add tomato paste
  7. Add sugar
  8. Add sambal oelek
  9. Add salt and pepper as desired
  10. Bring to the boil
  11. Simmer on low fire with lid (not fully closed) for about 1 hr
  12. Add vermicelli or spaghetti *
TIP: Mix the soup for a thicker soup before adding the vermicelli / spaghetti.
