Mediterranean Beef Ragout

MEDITERRANEAN BEEF RAGOUT


INGREDIENTS:
  • 1 kg (2.20 lbs) stewing beef cut into cubes
  • 4 onions cut into wedges
  • 5 carrots, halved and sliced
  • 2 tomatoes, chopped
  • 300 gr (10 oz) green french beans cut
  • 8 minced garlic cloves or garlic paste
  • 1/2 cup thyme, chopped
  • 1/2 cup parsley, chopped
  • Lemon juice
  • Olive oil
  • 2 cup beef stock
  • 1 tbsp black pepper
  • Salt to taste
METHOD:
  1. Pour some olive oil in a large frying pan an brown the meat all over.
  2. Transfer to a large slow cooker
  3. Add onions, carrots, tomatoes, garlic, thyme, salt and pepper
  4. Add the beef stock and slow cook for 4 hrs
  5. When the 4 hrs are almost up, boil the green beens for 15 min and to the slow cook pot
  6. Cook for another 15 min
  7. Pour some lemon juice over the meat
  8. Sprinkle parsley on the dish. 
  9. Serve hot.
