SHAKSHUKA
(EGGS IN TOMATO SAUCE)
INGREDIENTS:
- 1 tbsp. olive oil
- 1 onion finely chopped
- 2 garlic cloves crushed
- 1 red capsicum chopped
- 2 cans of chopped tomatoes (400 g each)
- 2 tbsp tomato paste
- 1/2 tsp chili powder
- 1 tsp sugar
- 1 tsp paprika powder
- 1 tsp cumin
- some chili flakes
- salt & pepper
- 6 eggs
- Coriander leaves chopped for garnishing
METHOD:
- Heat the olive oil in a frying pan
- Fry the onion until soft
- Add the garlic cloves
- Add the capsicum and fry till soft
- Add tomato paste
- Add the chopped tomatoes
- Add cumin
- Add paprika powder
- Add chilli powder
- Add chilli flakes
- Add sugar, salt & pepper
- Simmer over medium heat for 10-15 min
- Make little 'holes' in the sauce and put the eggs in the holes
- Cover the pan and cook for 10-15 min or until eggs are cooked
- Garnish with koriander leaves
- Serve
