Shakshuka

SHAKSHUKA

(EGGS IN TOMATO SAUCE)

INGREDIENTS:
  • 1 tbsp. olive oil
  • 1 onion finely chopped
  • 2 garlic cloves crushed
  • 1 red capsicum chopped
  • 2 cans of chopped tomatoes (400 g each)
  • 2 tbsp tomato paste
  • 1/2 tsp chili powder
  • 1 tsp sugar
  • 1 tsp paprika powder
  • 1 tsp cumin
  • some chili flakes
  • salt & pepper
  • 6 eggs
  • Coriander leaves chopped for garnishing
METHOD:
  1. Heat the olive oil in a frying pan
  2. Fry the onion until soft
  3. Add the garlic cloves
  4. Add the capsicum and fry till soft
  5. Add tomato paste
  6. Add the chopped tomatoes
  7. Add cumin
  8. Add paprika powder
  9. Add chilli powder
  10. Add chilli flakes
  11. Add sugar, salt & pepper
  12. Simmer over medium heat for 10-15 min
  13. Make little 'holes' in the sauce and put the eggs in the holes
  14. Cover the pan and cook for 10-15 min or until eggs are cooked
  15. Garnish with koriander leaves
  16. Serve
