PORK VINDALOO
INGREDIENTS:
- oil
- 1 kg pork cubes
- 4 onions chopped
- 6 tomatoes chopped
- 2 tbsp garlic paste
- 4 tsp ginger paste
- 3 tsp kashmiri chili powder
- 2 tsp ground turmeric
- 600 ml water
- 2 tsp salt
- 2 tbsp mustard
- 2 tsp cumin powder
- 6 cloves or little powder
- 6 cardamom pods (crushed or ground)
- 4 cinnamon sticks (1-inch) or powder
METHOD:
- Heat oil in large skillet and fry the pork pieces for 2 min and set aside
- In the same oil, fry the onions until soft.
- Add tomatoes, garlic paste and ginger paste, and fry for 1 min
- Lower the heat, add mustard and fry for 1 min
- Add chili and turmeric powder and fry for 1 min
- Add the cumin powder, cloves, cardamom pods and cinnamon and fry for 2 min
- Add the water and the pork and salt
- Simmer over low heat for 30 min
TIP: if it gets too thick, add some more water.
