Pork Vindaloo

PORK VINDALOO



INGREDIENTS:
  • oil
  • 1 kg pork cubes
  • 4 onions chopped
  • 6 tomatoes chopped
  • 2 tbsp garlic paste
  • 4 tsp ginger paste
  • 3 tsp kashmiri chili powder
  • 2 tsp ground turmeric
  • 600 ml water
  • 2 tsp salt
  • 2 tbsp mustard
  • 2 tsp cumin powder
  • 6 cloves or little powder
  • 6 cardamom pods (crushed or ground)
  • 4 cinnamon sticks (1-inch) or powder
METHOD:
  1. Heat oil in large skillet and fry the pork pieces for 2 min and set aside
  2. In the same oil, fry the onions until soft.
  3. Add tomatoes, garlic paste and ginger paste, and fry for 1 min
  4. Lower the heat, add mustard and fry for 1 min
  5. Add chili and turmeric powder and fry for 1 min
  6. Add the cumin powder, cloves, cardamom pods and cinnamon and fry for 2 min
  7. Add the water and the pork and salt
  8. Simmer over low heat for 30 min
TIP: if it gets too thick, add some more water.
