VEGETABLE JALFREZI
INGREDIENTS:
- Carrots – 1/4 cup, chopped
- Beans – 1/4 cup, chopped
- Capsicum – 1/4 cup, chopped
- Tomatoes – 1/4 cup, chopped
- Onions – 1/4 cup, chopped
- Ginger Garlic Paste – 3 tblsp
- Cauliflower – 1/4 cup
- Green Chillies – 2, chopped
- Coriander Leaves – handful
- Juice of 1 large Lemon
- Butter – 50 gms
- Cumin Seeds – 2 1/2 tsp
- Red Chilli Powder – 2 1/2 tsp
- Cumin Powder – 1 1/4 tsp
- Pepper Powder – 1 1/4 tsp
- Kasuri Methi (dried Funegreek leaves) – a pinch
- Salt as per taste
METHOD:
1. Heat butter in a pan over medium flame.
2. Add the ginger garlic paste, cumin seeds and fry for 20 seconds.
3. Add the vegetables and mix well.
4. After 30 seconds add the lemon juice, red chilli powder, cumin powder, salt, pepper powder and kasuri methi.
5. Stir to mix well and cook for 5 to 10 minutes or until all the vegetables are cooked.
6. Garnish with coriander leaves.
7. Remove and serve hot.
