BELGIAN RABBIT STEW
INGREDIENTS:
- 1 rabbit, cut into pieces
- 2-3 onions
- 1-2 tomatoes
- 1-2 carrots
- 4-5 garlic cloves
- 1 tsp crushed red chillies
- butter
- 1/2 tbsp salt
- pepper (ground)
- nutmeg (ground)
- tomato paste
- 500 ml red wine
METHOD:
- Melt the butter in a big cast iron pot
- Slice the onion and fry in the butter
- Meanwhile, heat up some butter in a frying pan
- Season the rabbit pieces with salt and pepper
- Put the rabbit in the frying pan with the seasoned side down
- Season the pieces of rabbit with nutmeg
- Fry the rabbit on both sides until it's nice and brown
- Add some water to the frying pan and simmer for a minute or 2
- Add the rabbit and the gravy to the onions in the cast iron pot
- Repeat step 9 until all pieces are done
- Peel and crush the garlic and add to the stew
- Chop up the carrots, tomatoes and add to the stew
- Add the red wine and the salt
- Simmer for 1,5 - 2 hours
- Add some tomato paste to thicken the gravy
TIP : goes well with potato croquettes and apple sauce.
