Belgian Rabbit Stew

BELGIAN RABBIT STEW




INGREDIENTS:
  • 1 rabbit, cut into pieces
  • 2-3 onions
  • 1-2 tomatoes
  • 1-2 carrots
  • 4-5 garlic cloves
  • 1 tsp crushed red chillies
  • butter
  • 1/2 tbsp salt
  • pepper (ground)
  • nutmeg (ground)
  • tomato paste
  • 500 ml red wine
METHOD:
  1. Melt the butter in a big cast iron pot
  2. Slice the onion and fry in the butter
  3. Meanwhile, heat up some butter in a frying pan
  4. Season the rabbit pieces with salt and pepper
  5. Put the rabbit in the frying pan with the seasoned side down
  6. Season the pieces of rabbit with nutmeg
  7. Fry the rabbit on both sides until it's nice and brown
  8. Add some water to the frying pan and simmer for a minute or 2
  9. Add the rabbit and the gravy to the onions in the cast iron pot
  10. Repeat step 9 until all pieces are done
  11. Peel and crush the garlic and add to the stew
  12. Chop up the carrots, tomatoes and add to the stew
  13. Add the red wine and the salt 
  14. Simmer for 1,5 - 2 hours
  15. Add some tomato paste to thicken the gravy
TIP : goes well with potato croquettes and apple sauce.
