Tomato Curry

TOMATO CURRY

Ingredients:

  • Tomatoes chopped or canned Tomatoes - 5 to 6
  • Ginger grated - 1 tsp
  • Garlic grated - 1 tsp
  • Chilli Powder - 1 tsp
  • Salt - 1 tsp
  • Coriander Powder - ½ tsp
  • Cumin Powder - ½ tsp
  • Oil - 4 Tbsp
  • Onion Seeds - ½ tsp
  • Mustard Seeds - ½ tsp
  • Fenugreek Seeds - ½ tsp
  • Cumin Seeds - ¼ tsp
  • Dried Red Chillies - 3
  • Lemon Juice for garnishing
  • Coriander Leaves / Cilantro chopped for garnishing
  • Eggs hard boiled - 3

Method:

• Place the Tomatoes in a large mixing bowl. To this add the Ginger, Garlic, Chilli Powder, Salt, Coriander Powder and Cumin Powder. Mix well and set aside.

• Heat Oil in a pan, add the Onion Seeds, Mustard, Fenugreek, Cumin Seeds and Red Chillies. Stir fry for about a minute until it gives out a nice aroma.

• Next add the Tomato mixture to this Oil mixture and stir fry for about 2-3 minutes.

• Then add Salt, cover and cook on low heat for about 10 minutes.

• Sprinkle the Lemon juice.

• Garnish with Coriander Leaves / Cilantro and serve hot with the boiled Egg.
