INGREDIENTS
- Flour, for surface
- 1 lb. pizza dough, at room temperature
- Cornmeal, for baking sheet
- 1/2 oz. extra-sharp Cheddar, coarsely grated
- 1 small onion, thinly sliced
- 1 small red pepper, sliced
- 1 small yellow pepper, sliced
- 1 poblano pepper, halved and thinly sliced
- 1 small jalapeño, halved and thinly sliced
- 1 tbsp. olive oil
- Kosher salt and pepper
DIRECTIONS
- Heat oven to 220 C.
- On a lightly floured surface, shape the pizza dough into a 35cm oval. Place on a cornmeal-dusted or parchment-lined baking sheet. Sprinkle Cheddar over top.
- In a large bowl, toss onion and peppers with olive oil and 1/4 tsp each salt and pepper. Scatter over dough and bake until the crust is golden brown, 10 to 12 minutes.
