Vegetable Soup potatoes

 

Ingredients

  • 1 large onion, chopped finely
  • 50g butter
  • 2 tbsp olive oil
  • 1 tbsp dried Italian mixed herbs
  • 3 medium size potatoes
  • 1 small sweet potato
  • 250g frozen mixed vegetables
  • 2 heaped tbsp bone broth concentrate
  • 1 tbsp vegetable stock powder
  • Salt, to taste
  • Cracked pepper, to taste

Method

  1. Place butter, olive oil and onions in a large pot. Simmer until the onions are translucent. 
  2. Add the potatoes, sweet potato and frozen vegetables. Mix.
  3. Add bone broth concentrate, mixed herbs, stock powder and enough water to cover the vegetables. Mix once then cover and simmer for 45 minutes to an hour, or until potatoes are soft.
  4. Five minutes before it’s ready, add cracked pepper and salt to taste.
