INGREDIENTS:
- 6-8 chicken drumsticks
- 3 tbsp oil
- 1/2 tsp cumin seeds
- 1 large red onion chopped
- 1 sprig of curry leaves (approx 10-12 leaves)
- 2,5 cm crushed ginger
- 4-5 garlic cloves crushed
- 2 green chillies slit
- 2 medium tomatoes chopped
- 1/2 tsp fennel powder or seeds if you don't have any
- 1 tsp red kashmiri chilli powder
- 1/2 tsp coriander powder
- 1/2 tsp black pepper powder
- 1 tsp garam masala
- 1/4 tsp turmeric powder
- 1,5 tbsp desiccated coconut
- water
METHOD:
- Rub salt on the chicken and set aside
- Heat 3 tbsp oil in a pan
- Add the cumin seeds
- Add the onion and sauté till light brown
- Add curry leaves
- Add ginger
- Add garlic
- Add chillies
- sauté until raw smell fades away
- Add the tomatoes
- Cook till tomatoes are soft enough
- Add the fennel powder
- Add the chilli powder
- Add coriander powder
- Add pepper powder
- Add garam masala
- Add turmeric powder
- Mix and stir all spices until oil has separated
- Add coconut
- Sauté for 1 minute on low heat
- Add the chicken drumsticks
- Cook for 5 min on medium heat
- Add a splash of water
- Cook & cover on low heat for 5 min
- Cook for another 5 min without lid
