Ingredients
- basmati rice-1kg
- chicken -1 kg im89
- onion-7 or 8 nos
- garlic-10 to 12
- ginger-1 medium size
- green chilli-5 or 6
- ghee-1/2 kg
- Cardamom-3 or 4 nos
- Clove-2
- Star anise -2 nos
- Bay leaves-1 nos
- Water -1 litre
- Lemon juice -1 nos
- Mustard seed-1/2 tsp
- Turmeric powder-1/2 tbsp
- Red chilli powder-2 tbsp
- Coriander powder-1 tbsp
- garam masala powder-1tbsp
- pepper powder-1 tbsp
- cumin powder-1 tbsp
- curry leaves-4 sprigs
- Cashew nut -250 grm
- raisins-250 grms
- salt to taste
- oil –small amount
Method
- Clean the basmathi rice and keep it in a side
- Crush the ginger and garlic
- Heat ghee in a large pot, add cloves, cardamom pods, bay leaves, star anise
- Bring water to a boil in a large pot over high heat. Drain and transfer the rice and spices to a medium bowl.
- Heat oil in a pan and add the onions.
- On a medium flame, shallow fry the onions for 10 to 12 minutes till they are a deep golden brown, without burning them. Drain and keep it in a side
- Heat oil in another pan add mustard seed until it splutters
- Add crushed ginger garlic ,green chili and onion ,saute for some minutes
- Add turmeric powder, chilli powder, coriander powder, pepper powder, garam masala and cumin powder mix well
- Add cinnamon cloves cardamom bay leaves and star anise.
- Add chicken pieces, curry leaves and fried onion mix well
- Take a pan, add ghee, cashew and raisins for frying
- At last we complete chicken, basmati rice and garnish
- Turn off the flame and serve.
