Kerala Spicy and Flavorful Chicken Roast

 

Ingredients

  • Chicken – 1 kg
  • Shallots – 20 to 24 nos
  • Garlic – 12 to 13 nos
  • Ginger – 1 nos
  • Curry leaves – 2 to 3 sprigs
  • Pepper seed – 1 tsp
  • Coconut pieces – 1 cup
  • Turmeric powder – 1/2 tbp
  • Red chilli powder – 2 tbsp
  • Coriander powder – 1 tbsp
  • Garam masala – 1 tbsp
  • Salt – 1 or 2 tsp
  • Oil – 5 to 6 tbsp

Method

  1. Today we have to prepare chicken Roast.
  2. Firstly, we have to peel the shallots and set them aside.
  3. Peel the garlic and set it aside.
  4. Then peel the ginger and set it aside.
  5. Then wash the peeled shallots, ginger,ginger and garlic and set them aside.
  6. chop the shallots and set aside.
  7. Then cut the coconut pieces from the shell and keep them aside.
  8. Then chopped into thin slices and set aside.
  9. Now we have to crush the shallots.
  10. Again, add ginger and garlic and crush them well.
  11. Then add pepper seed and curry leaves, crush them well, and set aside.
  12. Take a pan, add chicken pieces and grinded shallots and mix the paste.
  13. Then add powders like turmeric powder, coriander powder, and red chilli powder.
  14. Add some salt and chopped coconut pieces.
  15. Combine them well and marinate for half an hour.
  16. Heat oil in a pan, add mustard seed and let them splutter.
  17. Then add curry leaves and shallots.
  18. Saute them well for a few minutes.
  19. Then add the marinated chicken pieces and combine them well.
  20. Cover them and cook them well.
  21. Remove the lid and stir them well.
  22. Add some garam masala and crushed dry red chillies.
  23. Combine and cook for a few minutes.
  24. Once the chicken is well cooked, remove it from the fire and set it aside.
  25. Serve the tasty chicken perattu with appam.
