Ingredients
- Chicken – 1 kg
- Onion – 4 nos
- Green chilli – 3 to 4 nos
- Garlic – 8 to 9 nos
- Ginger – 1 nos
- Red chilli powder – 1 tbsp
- Turmeric powder – 1/2 tbsp
- Dry red chilli – 3 to 4 nos
- Fennel seed – 1 tsp
- Cinnamon – 1 nos
- Cardamom – 2 to 3 nos
- Salt – 1 or 2 tbsp
- Oil – 3 to 4 tbsp
Method
- Take a pan,add cleaned chicken pieces.
- Then add red chilli powder, salt and turmeric powder.
- Mix them well and marinate for half an hour.
- Heat oil in a pan, add the dry red chillies and saute them well.
- Add fennel seed,bay leaves, cinnamon and cardamom.
- Saute them well for a few minutes.
- Now we have to grind the fried dry red chilli and fennel seed mix into a fine powder and set it aside.
- Then we have to crush the ginger and garlic into a fine paste and set it aside.
- Heat oil in a pan, add the chopped onion, and sauté them well.
- Sprinkle some salt on them and saute them well until they become transulant.
- Add chopped green chillies and curry leaves; sauté them well.
- Add the crushed red chilli mix and sauté them well.
- Add marinated chicken pieces and sauté them well.
- Cover and cook them well.
- Remove the lid and check whether the chicken is well cooked or not.
- Add some curry leaves and sauté them well.
- Cook for a few minutes.
- Remove from fire and set aside.
- Serve the tasty chicken roast with appam or meals.
