Vegetable Pillau

 


Ingredients

  • Green peas
  • Potato
  • Carrot
  • French beans
  • Ginger
  • Garlic
  • Coriander leaves
  • Mint leaves
  • Whole spices
  • Lemon juice
  • Rice
  • Chili powder
  • Turmeric powder

Method

  1. Wash and Keep the green peas to cook.
  2. Wash the rice and soak it in water for 30 minutes.
  3. Peel the onions and finely slice and keep aside.
  4. Peel potatoes and cut them into cubes.
  5. Peel carrots and chop them into small cubes.
  6. Chop up the french beans.
  7. Clean ginger and garlic.
  8. Clean coriander and mint leaves and chop them up.
  9. Grind the whole spices to a paste on a stone grinder and keep aside.
  10. Crush ginger and garlic and keep aside.
  11. Heat oil in a uruli, add dried chilies. Saute in sliced onions. Add in the potatoes, carrots, french beans, and cooked green peas.
  12. Add in the crushed ginger and garlic along with the whole spices. Add the chopped leaves along with the lemon juice.
  13. Add chili powder, turmeric powder, and ghee.
  14. Strain the rice and add it to the vegetable mix and saute well.
  15. Add water till the water covers the rice. Add ghee, cover, and cook.
  16. Open the lid and mix the rice when water is all absorbed. Remove from flame and keep aside. Keep the lid closed for few minutes.
  17. Vegetable Pulao is ready
