indian spaghetti

 Ingredients

  • 2 tbsp light cooking oil
  • 1 large onion finely chopped
  • 3 garlic cloves minced
  • 1/2 tsp red chili powder
  • 1/4 tsp turmeric
  • 1 tbsp coriander powder
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 2 tbsp tomato paste
  • 2 large tomatoes finely chopped
  • salt & pepper to taste
  • 500 gms ground chicken (or beef, pork etc)
  • 2 cups frozen mixed veggies thawed
  • 500 gms whole-grain spaghetti cooked according to package instructions, drained and set aside

Instructions

  1. Heat oil in a large wok and sauté onions and garlic till lightly browned and fragrant. Add in spices and tomato paste, and fry for a few seconds.
  2. Add in the chopped tomatoes, season with salt and pepper, and cook for a few minutes to combine well. Stir in ground chicken, and let it cook covered for a few minutes till chicken completely cooks through.
  3. Add in the veggies and mix well. If the sauce is too dry, you can add in a bit of water to thin it down. Now toss in the spaghetti, and stir-fry to combine well with the sauce.
