Ingredients
- 2 tbsp light cooking oil
- 1 large onion finely chopped
- 3 garlic cloves minced
- 1/2 tsp red chili powder
- 1/4 tsp turmeric
- 1 tbsp coriander powder
- 1 tsp dried parsley
- 1 tsp dried oregano
- 2 tbsp tomato paste
- 2 large tomatoes finely chopped
- salt & pepper to taste
- 500 gms ground chicken (or beef, pork etc)
- 2 cups frozen mixed veggies thawed
- 500 gms whole-grain spaghetti cooked according to package instructions, drained and set aside
Instructions
- Heat oil in a large wok and sauté onions and garlic till lightly browned and fragrant. Add in spices and tomato paste, and fry for a few seconds.
- Add in the chopped tomatoes, season with salt and pepper, and cook for a few minutes to combine well. Stir in ground chicken, and let it cook covered for a few minutes till chicken completely cooks through.
- Add in the veggies and mix well. If the sauce is too dry, you can add in a bit of water to thin it down. Now toss in the spaghetti, and stir-fry to combine well with the sauce.
