This dish is usually done with beef, but as you can see, you can also use pork if beef is not available.
INGREDIENTS:
- 4 tbsp oil
- 1 large onion, finely chopped
- 1/2 tsp ground coriander
- 1/2 tsp ground turmeric
- 1 x 2,5 cm / 1 inch root ginger, finely chopped
- 1 chilli, deseeded and chopped
- 450 gr / 1 lbs pork cut into strips
- 1 green or red pepper (capsicum) cored, deseeded and chopped
- 2 tomatoes quartered
- juice of 1 lemon
- salt
METHOD:
- Heat the oil
- Add the onion and fry until soft
- Add the coriander
- Add the turmeric
- Add the ginger
- Add the chilli
- Fry over low heat for 5 minutes
- Add the pork, increase the heat, and cook, stirring, until browned all over
- Add the pepper (capsicum) and cover. Simmer gently for about 10 min, until the meat is tender
- Add the tomatoes
- Add the lemon juice
- Add salt to taste
- Cook, uncovered for about 3-5 minutes
- Serve hot.
