Chilli Pork Fry - India


This dish is usually done with beef, but as you can see, you can also use pork if beef is not available.

INGREDIENTS:

  • 4 tbsp oil
  • 1 large onion, finely chopped
  • 1/2 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1 x 2,5 cm / 1 inch root ginger, finely chopped
  • 1 chilli, deseeded and chopped
  • 450 gr / 1 lbs pork cut into strips
  • 1 green or red pepper (capsicum) cored, deseeded and chopped
  • 2 tomatoes quartered
  • juice of 1 lemon
  • salt

METHOD:

  1. Heat the oil
  2. Add the onion and fry until soft
  3. Add the coriander
  4. Add the turmeric
  5. Add the ginger
  6. Add the chilli
  7. Fry over low heat for 5 minutes
  8. Add the pork, increase the heat, and cook, stirring, until browned all over
  9. Add the pepper (capsicum) and cover. Simmer gently for about 10 min, until the meat is tender
  10. Add the tomatoes
  11. Add the lemon juice
  12. Add salt to taste
  13. Cook, uncovered for about 3-5 minutes
  14. Serve hot.
