Kerala Egg Curry
KERALA EGG CURRY
INGREDIENTS
- 3 green chillies (chopped)
- 4 tbsp oil
- 1 small cinnamon stick
- 3 cardamom
- 1 tsp fennel seeds
- 1 bay leaf
- 2 stone flower (dagarful)
- 1 inch ginger
- 5 garlic cloves
- 5 chopped onions
- salt
- curry leaves
- 1 tbsp coriander powder
- 1 tsp turmeric powder
- 1,5 tbsp chilli powder
- 5 chopped / sliced tomatoes
- 2 cups of water
- 1 cup coconut milk
- 8 eggs
- chopped coriander
METHOD:
- Heat the oil in a pan
- Add the cardamom, cinnamon, fennel, bay leaf, stone flower, chillies, ginger and garlic and saute for 30 sec
- Add onions and salt and fry till brown
- Add curry leaves, coriander, turmeric and chili powder and stir fry for few seconds
- Add tomatoes and saute for 10 min on low flame
- Add 2 cups of water and cook for 2 min
- Add coconut milk and mix well
- Add the eggs and cover & cook for 10 min on low flame
- Garnish with chopped coriander
