Kerala Egg Curry

KERALA EGG CURRY



INGREDIENTS

  • 3 green chillies (chopped)
  • 4 tbsp oil
  • 1 small cinnamon stick
  • 3 cardamom
  • 1 tsp fennel seeds
  • 1 bay leaf
  • 2 stone flower (dagarful)
  • 1 inch ginger
  • 5 garlic cloves
  • 5 chopped onions
  • salt
  • curry leaves
  • 1 tbsp coriander powder
  • 1 tsp turmeric powder
  • 1,5 tbsp chilli powder
  • 5 chopped / sliced tomatoes
  • 2 cups of water
  • 1 cup coconut milk
  • 8 eggs
  • chopped coriander

METHOD:

  1. Heat the oil in a pan
  2. Add the cardamom, cinnamon, fennel, bay leaf, stone flower, chillies, ginger and garlic and saute for 30 sec
  3. Add onions and salt and fry till brown
  4. Add curry leaves, coriander, turmeric and chili powder and stir fry for few seconds
  5. Add tomatoes and saute for 10 min on low flame
  6. Add 2 cups of water and cook for 2 min
  7. Add coconut milk and mix well
  8. Add the eggs and cover & cook for 10 min on low flame
  9. Garnish with chopped coriander
