Kerala Mango Pickle

 

Ingredients

  • Mango – 1 kg
  • Curry leaves – 3 sprigs
  • Red chilli powder – 2 tbsp
  • Fenugreek powder – 1 tsp
  • Fenugreek seed – 1 tsp
  • Turmeric powder – 1 ½ tsp
  • Asafoetida powder – 2tsp
  • Dry red chilli – 3 nos
  • Vinegar – 1 tbsp
  • Mustard seed – 1 tsp
  • Salt – 1 or2 tsp
  • Oil – 2 or 3 tbsp

Method

  1. Firstly, wash the raw mangoes ,then peel and cut into small pieces, set aside.
  2. Take a large bowl, add mango pieces, salt, red chilli powder, fenugreek powder, turmeric powder, asafoetida powder and curry leaves, mix them well and set aside.
  3. Heat oil in a pan, add mustard seed let it splutter, add dry red chilli, fenugreek seed, curry leaves asafoetida a powder and vinegar. fry them well .
  4. Then pour the mixture into the mango mixing pan and combine them well.
  5. The instant mango pickle is ready to serve.
