Kerala Masala Aloo Fry

 

Ingredients

  • Potato – 2 to 3 nos
  • Onion – 2 nos
  • Green chilli – 3 to 4 nos
  • Curry leaves – 3 or 4 sprigs
  • Red chilli powder – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Pepper powder – 1 tsp
  • Garam masala – 1 tsp
  • Asafoetida powder – 1 tsp
  • Urad dal (black gram or lentils) – 1tsp
  • Cumin seed – 1 tsp
  • Fenugreek seed – 1 tsp
  • Mustard seed – 1 tsp
  • Salt – 1 or 2 tsp
  • Oil – 3 to 4 tbsp

Method

  1. Firstly, peel the potato and cut it into small cubes. Wash, drain and set aside.
  2. In a pan, heat the oil and add the mustard seed, allowing it to sputter.
  3. Then add urad dal, cumin seed and fenugreek seed and saute them well.
  4. Add curry leaves, green chillies and chopped onion.
  5. Saute them well for a few minutes.
  6. Sprinkle some salt on them and saute them well.
  7. Then add curry powders like red chilli powder, turmeric powder, pepper powder and garam masala.
  8. Saute till the raw smell disappears.
  9. Then add asafoetida powder and saute them well.
  10. Add the chopped potato cubes and combine them well.
  11. Cover and cook the potatoes well.
  12. Remove the lid, saute and fry them thoroughly.
  13. Remove from fire and serve
